Perfectly creamy with the bright citrus flavour of fresh lemons, this version is lower in sugar and free from unnecessary additives, making it a guilt-free choice that anyone can enjoy—even if you’re mindful of blood sugar levels.

  • 120 ml Fresh Lemon Juice
  • 120 g Skinny Sweet Sweetener
  • 4 Fresh Eggs

  1. Grab a pot and add about a quarter of water and bring to a simmer.
  2. In a glass bowl (big enough to sit on top of your pot) mix all your ingredients together.
  1. Turn off the heat on your pot and the glass bowl with the mixed ingredients on the pot.
  1. Over the course of the next 5-15 minutes, keep stirring the contents slowly while the contents warm up and thicken.
  1. Your Lemon Curd should become a nice thick and creamy consistency.
  1. Transfer your Lemon Curd to a container and let it cool down.
  1. Enjoy your home-made guilt-free Lemon Curd. Here we added it to a bowl of Yoghurt.
